Do you feel like all of your interactions with friends and family have become a bunch of texts and emails? I did not even notice it until recently when I started needing help with wedding planning. Texts are great for quick messages or little reminders but I have started to really enjoy spending even just a few minutes catching up on the phone. I was enjoying these conversations more and more that I started looking into getting myself a little stationary so I can start writing letters and show those that are most important to me that I took the extra effort to write a note to them.

Then Brian and I started looking for wedding stationary and wow was I blown away by everything out there. I am pretty happy that both of us wanted to go with something fairly simple so picking the stationary went quickly and smoothly. However for myself the options are limitless and I cant decide.

Garden & Gun wrote a great article on the etiquette of stationary for both him and her and what should be sitting on your desk. I thought it was a great starter to help figure out what I should order for me, and maybe Brian too 🙂 Read more…

We spent a beautiful weekend outside of the city. We stayed in a little town near Woodstock and up there the weather was colder and the leaves already started changing. I was happy to bundle up in a comfy sweater and a warm cup of tea, and spend my weekend enjoying the view from our porch.

How are you doing with the fall weather slowly sneaking in? This time of year kick starts me into baking again, there is always a hiatus with the heat in the summer. Now that it is a little chillier I thought it would be fun to start with experimenting with pumpkin. My first go at Pumpkin bars had some great flavor but the texture was more like dense bread rather then chewy thin bars. My second attempt was successful enough that I am excited to share this simple yet delicious recipe!

Gluten Free Pumpkin Bars (with an Optional Lactose Free Cream Cheese Frosting)

Ingredients:

1 cup of gluten free flour (I used Bobs Red Mill)

2tsp cinnamon

1/2 tsp baking soda & 1/2 tsp baking powder

1/2 tsp salt

2 eggs

3/4 cup sugar

1/4 cup coconut oil

1 cup pumpkin

1/2 tsp vanilla

For the Cream Cheese Frosting:

1 cup powdered sugar

4oz vegan cream cheese

1/4 cup of any butter softened (I used goat butter)

1/2 tsp vanilla

Brian and I are off on a family vacation to Woodstock, Vermont! I have actually never been to Vermont and am very excited to visit a new state. Brian spent many summers there with family and we will be joining his parents and his older sister and husband up in a house they rented for a week.

I am excited for a few days of quiet relaxation, and time with Brian and his family, but I am also looking forward for the long drives there and back. Its 5 hours each way and the perfect time to catch up with Brian, listen to podcasts/music and enjoy the scenic sites out the window. I also feel like it gives the perfect time to just unwind from all the stress and actually arrive at our destination relaxed and ready to enjoy the vacation.

The picture at the top of the post and this one above are of the the house we are staying at and the property surrounding it. It is the Fern Brook House located on Birch Hill Farm right outside of town.

The property is gorgeous and I hope to spend most of my free time exploring,unfortunately Charlie does not get to join us this time.

The girls are planning on a spa day at the Woodstock Inn & Spa… I cant wait for my body wrap and relaxing massage. With us being preoccupied, the boys are planning on spending the day outdoors at a shooting range.

We plan on mostly cooking at the house since it comes with a beautifully equipped large kitchen. However we did make reservations for two restaurants that offer farm to table dining experience, Simon Pearce & Cloudland Farm.

The rest of our time will probably consist of lounging around reading and relaxing and at the lake swimming and kayaking.

I don’t think we will have easily accessible internet access and I promised Brian I would stay away from the computer as much as possible, so I will not be updating on the blog the rest of the week.
